Crockpot Cauliflower Cheddar Soup

October 14, 2013 by Fotini Filed Under: cauliflower cheddar soup, crockpot, crockpot meals, Fall meals, recipes, soup 473 Comments

I’m excited to share a very tasty recipe with you today! I typically never cook with cauliflower, but thought I would think outside the box for a meal and create something new! I love using my crockpot in the Fall and Winter months! It makes cooking good meals a breeze!
Here’s what you’re going to need:
  • 1 head of cauliflower
  • 2 cups sharp shredded cheddar cheese
  • 1 32 oz. low sodium container of chicken broth
  • 1/2 cup of milk
  • 2 tablespoons of minced garlic
  • 1/4 cup of flour
Start by rinsing your cauliflower and patting dry. Pull the heads off and add to crockpot. Next add the minced garlic, chicken broth, milk and cheese. Turn on high for 2-3 hours, add the flour to thicken up, stir well and continue to cook for another 30-45 minutes.

The cauliflower is nice and soft and full of taste!! Top with crumbled bacon, additional shredded cheddar and maybe even some chives, yum! Serve with a warm french baguette!

I will definitely be making this recipe again!

Autumn on the Porch

September 16, 2013 by Fotini Filed Under: Autumn, decor, diy, DIY craft, fall, Fall front porch, front porch 21 Comments

I just love Fall and all the colors that come with it! The burnt oranges, rustic burgundys’, olive greens and metallics adorn my home the entire Fall season! It’s so much fun to create your own Fall decor to enjoy! Today I’m going to share with you how I created a simple Autumn sign!

If you’ve been following along with my blog for awhile, you have probably seen a couple of these type of signs before! I just love making them because they’re so simple, affordable and cute! You will use at total of 12 shims for this project. Begin by laying two horizontally and start gluing the shims one by one until completed. I broke of the ends of a few of mine just to add some character! I painted the shims a beautiful, warm color: Valspar Coral Gable Biltmore Mediterranean Carmel. I gave it a good two coats and let dry completely.

I sketched out by hand my pumpkin and font design. I began to fill in the pumpkin using clear craft glue and sprinkling with gold glitter evenly. While that was drying I filled in my stem with brown craft paint and traced the penciled wording with black craft paint, let dry.
The first time I held up my sign Ā to view, some of the loose glitter fell onto the, still wet, lettering creating an awesome glittery effect! I couldn’t be more happy with that oopsie šŸ™‚
To complete this project, cut a shim in half and glue together at (about) a 45 degree angle. This creates a sturdy backing! And voila, an adorable custom sign just like that!

Scrumptious Apple Pie

November 4, 2012 by Fotini Filed Under: apple pie, apple pie recipe, fall, pie, recipe-1, recipes, Thanksgiving dinner

Who doesn’t love a good apple pie?! Well today I felt brave enough to attempt one by scratch. Yes, that’s right, I didn’t use a recipe and it turned out delicious!! Last Fall we went to our local fruit farm (Lynd’s) and picked way too many apples, so I froze some in our deep freezer. I went to the basement two days ago and brought them up to thaw. They feltĀ a littleĀ mushy but perfect for cooking!

Here’s what you’re going to need:

  • pre-made pie crust- 2 rolls
  • at least six cups of sliced apples
  • 1/2 cup of sugar
  • a pinch of salt
  • a dash of cinnamon
  • 5 tablespoons of flour
  • 2 tablespoons stick butter
  • caramel sauce for drizzle
The thing I love about this pie is we had a variety of apples we picked, so some are tart, and some are sweet . Great mixture! Anyways, start by washing, peeling and slicing your apples into slices and place them into a saucepan. Add your sugar, flour, salt, cinnamon and stick butter to the pan over low heat. Let this cook and thicken, it will smell like heaven!! While your pie filling is cooking, grab your pie plate and crust. Unroll one piece of the crust and place into the pie plate, thumbing off any extra dough. Grab your second roll of pie crust, roll it onto a flat surface and cut it into about 1/2 inch pieces, length wise. I wanted to do a braid design for my crust, so I grabbed three pieces of the dough and simply began to braid them. I cut off the top and bottom and pressed it onto my pie pan, continue this until completely finished. I did about three sets all the way around. Grab some foil and gently cover your crust. By this time, your pie filling should be thick and fragrant. Remove from heat and pour into your pie crust. I cut a few additional strips of dough to place on top of the pie filling in a criss-cross design. Drizzle a little bit of caramel sauce over top of the entire pie. Bake in a 375 degree oven for 25 minutes, remove the foil from the crust and bake an additional 7-10 minutes. And ta-da, you have a beautiful pie that it looks like you’ve been slaving over all day to make!
My husband and dad both had seconds, and my husband requested that I make this again for Thanksgiving! I hope you enjoy this recipe, I’ll be keeping it around šŸ˜‰

Pretty, Painted Pumpkins

September 21, 2012 by Fotini Filed Under: arts and crafts, craft paint, diy, fall, home decor, painted pumpkins, pumpkins, stencil 50 Comments

I’ve been so excited to do this project!Ā We had just went to the pumpkin patch in the early part of the week and I could just barely wait to paint those pumpkins šŸ™‚ I headed to Hobby Lobby to pick up my supplies for this project. I opted for a pearl finish, metallic silver, antique gold and midnight blue craft paints. These were 30% off at the time (making them about $1.15 each). I also grabbed a cute stencil in the same isle for $2.99 ( I will use this for lots of other projects!) I browsed the ribbon for something that really stood out to me. I didn’t find the exact color I was looking for, so I went with this navy blue and white design that will go well with my paint colors ( originally $3.99 but I used a 40% off coupon, making it $2.42).
Once I was back home, I grabbed a painters tarp and my two large pumpkins and headed to the deck. I sprayed these with a cheap, white spray paint I bought at Walmart previously for $.97. While those were drying, I grabbed a few paper towels and small tupperware lids and got to work. I like to use the tupperware lids for my paint because they wipe clean really easy and you can re-use them over and over! I started my first pumpkin with the chevron design. I used about a 1.5 inch piece of painters tape cut in half to arrange the design. The first color I used was the metallic silver, and I brushed it over the entire top of the pumpkin including the stem. I did the top of my small pumpkin with the silver as well. Once the silver was (somewhat) dry, I painted the bottoms with midnight blue. I grabbed one of my large pumpkins I sprayed white and tapped a stencil “R” in the middle. Let me tell ya, stenciling a pumpkin was a little bit of a booger! Any who, I also used the midnight blue for this; carefully remove your stencil. Feeling a bit discouraged from the previous stencil, I gave it another go and taped the designed stencil next to the “R”. For this, I used the antique gold paint and carefully filled in the entire stencil, removed and did it to the other side.
Ā I was so anxious to see how my chevron pumpkin turned out, I started to remove the tape… It started to pull the paint off šŸ™ Oh well, it’s not the end of the world and I decided to just go over it will the antique gold to blend it all together. I also painted one other medium pumpkin I had with the gold, as well as the middle of my small pumpkin. Next, I went back to my large initialed pumpkin and began to use the pearl finish as a glaze over the entire pumpkin. It gave it a beautiful glow!
I finished the pumpkins off by embellishing them with the ribbon I picked out! This project took me some time, but I’m happy with how there turned out! They aren’t perfect, but I didn’t expect them to be šŸ™‚
