I’m excited to share a very tasty recipe with you today! I typically never cook with cauliflower, but thought I would think outside the box for a meal and create something new! I love using my crockpot in the Fall and Winter months! It makes cooking good meals a breeze!
Here’s what you’re going to need:
- 1 head of cauliflower
- 2 cups sharp shredded cheddar cheese
- 1 32 oz. low sodium container of chicken broth
- 1/2 cup of milk
- 2 tablespoons of minced garlic
- 1/4 cup of flour
Start by rinsing your cauliflower and patting dry. Pull the heads off and add to crockpot. Next add the minced garlic, chicken broth, milk and cheese. Turn on high for 2-3 hours, add the flour to thicken up, stir well and continue to cook for another 30-45 minutes.
The cauliflower is nice and soft and full of taste!! Top with crumbled bacon, additional shredded cheddar and maybe even some chives, yum! Serve with a warm french baguette!
I will definitely be making this recipe again!

Hi Heather! I wouldn’t see why you couldn’t use frozen! For the length of time that it cooks in the crockpot I think it should be fine! I hope it turns out for you! Please come back and let me know 🙂

I really enjoyed this soup. Even my soup hating husband enjoyed it. I just used the immersion blender to make it more thick and less chunky and he was a fan. I added a diced onion to my crockpot as well.
