{ Easy Mini Pizzas }
Our family loves pizza and since I’ve been watching what I eat, I’ve came up with a few healthy alternatives to expensive, fattening delivery. For this recipe I used sandwich skinnies, they’re made of whole grains and fiber and are 100 calories for the two slices. I make some with pizza sauce and desired toppings, and some I brush with a small amount of olive oil, light mozzarella cheese and fresh veggies.
The kids and I love these! But to my surprise my husband and Dad raved over them the other night! Super quick, healthy and delicious.. I’ll take it!
Scrumptious Apple Pie
Who doesn’t love a good apple pie?! Well today I felt brave enough to attempt one by scratch. Yes, that’s right, I didn’t use a recipe and it turned out delicious!! Last Fall we went to our local fruit farm (Lynd’s) and picked way too many apples, so I froze some in our deep freezer. I went to the basement two days ago and brought them up to thaw. They felt a little mushy but perfect for cooking!
Here’s what you’re going to need:
- pre-made pie crust- 2 rolls
- at least six cups of sliced apples
- 1/2 cup of sugar
- a pinch of salt
- a dash of cinnamon
- 5 tablespoons of flour
- 2 tablespoons stick butter
- caramel sauce for drizzle
16 Sweet Potato Casserole Recipes
One of my favorite sides on Thanksgiving is sweet potato casserole, yumm! This year I will be hosting Thanksgiving dinner at our “new” home! I’m super excited because I love hosting, but my grandparents from Greece will be here! I haven’t seen them in six years, and they’ve not met either of my children. This is going to be a really special time, and I can’t wait to spend the Holiday with all of our family! With that being said, I want some side dishes that wow my guests! Here’s a few sweet potato casserole recipes I think you’ll love!
Not sure which one has won my vote yet, they all sound delicious!!

Southwestern Style Quesadillas
I didn’t know what to make for dinner tonight.. It’s one of those nights where I want something good, fast and easy! I browsed the fridge and pantry, and here’s what I came up with… southwestern style quesadillas. They were delicious!! Here’s what you’re going to need:
- tortillas
- mild or sharp cheddar cheese, shredded
- corn
- canned black beans
- sour cream
- lettuce, onions, olives (for toppings)
- taco sauce, optional
Start by warming your skillet and spraying with a light cooking spray, fill half of the tortilla with cheese, corn and black beans. Fold over. Let cook until each side is lightly browned. Repeat for your desired amount of quesadillas. Top with a dollop of sour cream, onions, lettuce, olives and taco sauce. Or any other preferred toppings. This dinner is super delish, quick ( took me about 10 minutes start to finish ), and the kids loved it!
Simple, Delicious Chili Recipe+
I love me some comfort food for Fall and Winter.. I’ve already made my first pot of chili this Fall season, and it was delicious! So good, I thought, I’d share my recipe with all of you 🙂
This is really a simple recipe so and tasty! Here’s what you’re going to need :
- Crock pot or large pot
- 1 can red kidney beans, rinsed
- 1 can chili beans
- 1 can stewed tomatoes
- 1 can diced tomatoes
- 1 pound ground beef or ground turkey
- 1 small onion, chopped (optional, I didn’t add because my son doesn’t liked “cooked” onion)
- 1/2 cup of water
- salt, pepper, chili powder , oregano and garlic salt to taste
Start by browning your meat in a frying pan. While meat is browning, begin opening and rinsing your beans, then add to crock pot. Also add your stewed and diced tomatoes. If you chose to use onion, dice it up and add it to your meat for flavor. Add just a couple of dashes of salt, pepper, chili powder , oregano and garlic taste. I don’t measure, I just eye it! Continue to cook until meat is fully cooking and fragrant. Add meat to crock pot and stir all ingredients together. Add a half cup of water. Turn your crock pot on high for 2-2 1/2 hours and cook! If you prefer more liquid, just add an additional half cup of water. You’re all done!
This recipe is a family favorite! It’s quick to put together, simple ingredients and very reasonable! Have fun with toppings for your chili. You can use the traditional shredded cheddar cheese on top, a dollop of sour cream, crushed crackers or do something different! This time I chopped up fresh white onion and green pepper and a few fritos, it was soo yummy!
{ Pantry Accessories and a Yummy Recipe }
I just can’t stay away from the dollar corner at Target, it’s dangerous, haha! Today I got six small natural box crates for my pantry $1 each, alphabet stamps $1Â and alphabet stickers $1. I have lots of odds and ends in my pantry floating around, so I figured these little storage containers would be perfect! I already had stamp ink at home in silver, so I stamped each container depending on its’ contents. So far I have, candy, oatmeal, and misc. I have three leftover for when I organize my pantry ( I plan on doing this soon!!). Here’s how it looks!
Speaking of dangerous, here’s a recipe I remember so well from my childhood… Puppy chow. My Nana used to make it in the summer’s for us to munch on, and I haven’t had it since. I had all the ingredients for it, so I got the urge to give it a try!
Here’s what you’ll need:
- 9 cups rice cereal (Chex)
- 1/4 cup butter
- 1 cup chocolate chips ( I used 3 Hersey’s bars because that’s what I had!)
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla
- 3 cups powdered sugar
- large gallon zip-lock bag
Start off by adding the butter, peanut butter and chocolate to a microwave safe bowl and microwave for one minute. Once melted, add 1/2 teaspoon vanilla and mix well. Add your 9 cups of rice cereal to the mixture and stir until cereal is completely coated. Put your 3 cups of powdered sugar in a gallon zip-lock bag, add cereal mixture, and shake, shake, shake!! That’s it….Tastes just like I remember, yummy!
Meatloaf Cups with Sweet Ketchup Glaze
I’ve been craving meatloaf, but it’s not something I enjoy making because it’s messy and takes awhile to bake in the oven. But, the other day I came across this pin on Pinterest (originally from Rachel Ray on food network), that made them in a muffin pan. Genius! So this evening for dinner, I tried it out, and it was delicious!! My husband kept telling me how good it was 🙂
Here’s what you’ll need:
- 1 large egg
- 1/4 cup, plain bread crumbs
- 1 lb. ground beef ( mine was about 1 lb. 3 oz. )
- dash of hot sauce
- garlic powder, salt and pepper, to taste
- 1 large green pepper
- 1 small or half a medium white onion
For glaze simply mix desired amount of ketchup with 2 tablespoons brown sugar and mix well, set aside.
I always start by chopping my vegetables and add them to large mixing bowl. Top with desired amounts of salt, pepper and garlic powder. Add your uncooked meat, egg and breadcrumbs. Mash everything together really well. Push meat mixture into each muffin space to the top, and bake at 350 for 25 minutes. Pour a teaspoon full, of ketchup glaze over the top and bake for an additional 10 minutes.
These are the perfect size for kids, great for parties and really tasty!
