Pumpkin Poke Cake

We were headed to a get together with friends, and we were each asked to bring a side dish or dessert. I had been wanting to give a certain dessert a try, so I did just that! Have you tried better than sex cake? It is sinfully delicious! I had that dessert in mind, but with a Fall twist! That’s how I came up with this tasty pumpkin poke cake!
Here’s what you’re going to need:
1 box of yellow cake mix (and all ingredients listed on box)
1 can of puree pumpkin
1 tsp. nutmeg
1 tsp. pumpkin pie spice
1 can of sweetened condensed milk
1/4 cup caramel ice cream topping (not pictured)
toffee tidbits
1 container of whipped cream
chocolate syrup (optional)
Begin by preparing the yellow cake mix according to the directions on the box. I used a 13×9 inch pan for this cake. Add in your pumpkin puree, nutmeg and pumpkin spice and mix well. Pour evenly into your cake pan. Bake according to your box instructions. I actually ended up cooking mine an additional 10 minutes more than the box suggested because of the thickness with the pumpkin mixed in. Once fully cooked, remove from the oven and begin to poke holes throughout the entire cake using something small. I used a cake pop stick. In a small saucepan, mix your sweetened condensed milk and caramel together and bring to a thickened consistency. Once thick, remove from heat and pour over the entire cake, allowing it to fill up the holes you made in the cake. Put in the fridge and allow to cool from about 1 hour. Remove and add smooth whipped cream, toffee bits and chocolate drizzle if desired. 
I was pretty pleased with how this cake turned out! It’s perfect for Fall and especially if you love pumpkin! Our friends raved over it, and I’m sure yours will too!!

Apple Crisp

Let me start off by saying this recipe is NOT diet friendly, but it is sooo tasty! A few weeks back we enjoyed a relaxing dinner at my in-laws. My mother-in-law baked a deeelicious apple crisp for dessert and I was quickly asking for the recipe! Lucky for you, I’m sharing it today (wink!)ย 

If you haven’t been already, plan a fun afternoon to go apple picking with the family to gather some of the delicious fruit for this recipe! For this recipe I used gala apples, but any kind will do!

Begin by slicing your apples, I use an apple slicer which makes this part a breeze! If you prefer, peel your apples too, I leave mine on ๐Ÿ™‚ Add the apples to a mixing bowl and sprinkle with the lemon juice to keep them from browning. Next add sugar, flour, nutmeg, cinnamon and apples, mix well. Pour this mixture into a buttered 9×13 casserole dish. In a separate mixing bowl mix together the melted butter, flour, white & brown sugar and oatmeal, mix thoroughly and add to the apple mixture as the topping. Bake at 350 for 1 hour. Let cool at least 10 minutes before serving. To really top this delicious dessert off, add a scoop of vanilla bean ice cream, mmm mmm!

{ Peach, Caramel Frozen Yogurt }

Do you have a sweet tooth? I do! And I’m loving this delicious frozen yogurt recipe I came up with inplace of ice cream. It’s sooo yummy!
With a few simple ingredients and a few hours of freezing time, you will have a homemade frozen yogurt. So lets get to it… Start with a 32 ounce container of vanilla Greek yogurt. I only used about 28 ounces or so (I’ll explain later). Pour yogurt into a small mixing bowl and add a half cup of heavy whipping cream and mix well. For taste, I added a little dash of cinnamon and vanilla. Wash and dice a ripe peach and add to mixture. Next add crumbled graham crackers and carmel to your liking. Mix everything well and transfer back to the original container. This is why I only used 28 ounces as mentioned earlier so I would have room for the additional ingredients ๐Ÿ™‚ Freeze for a minimum of 4 hours before serving.
I topped mine with a little extra graham crackers and caramel for extra goodness!

Pumpkin Pie Muddy Buddies

Fall is full of tons of yummy recipes and today I have one to share with you! I tend to keep munchies around the house because the kids and hubby like to snack and like a nibble of something sweet after dinner! This recipe would be perfect for a Halloween party, Fall get together or even as a sweet gift for the neighbors!
Here’s what you’re going to need:
  • Cinnamon and original Life multigrain cereal
  • 1/4 cup of butter
  • 1 cup of white chocolate chips
  • Pumpkin pie spice
  • 1- 1 1/2 cups powdered sugar
Begin by melting the butter and white chocolate over low heat in a saucepan. Once completely melted and smooth, remove from heat. I decided to do a mixture of cinnamon and original multigrain cereal. Begin by adding a layer of cereal, then pour the white chocolate mixture and top with a little dash of pumpkin pie spice, continue with the remaining ingredients. Mix well to coat cereal entirely. Top with powdered sugar and mix well. I didn’t add as much powdered sugar to this batch because the white chocolate is rich and didn’t want it to be too much!

{ Blueberry Tart }

I’m a total sucker for sweets! I love to satisfy my sweet tooth without all those added fat grams and calories. Today I’m going to share with you a delicious, easy blueberry tart!

Here’s what you’re going to need:

  • 1 roll of pre-made pie crust
  • 2 pints of blueberries
  • 1 cup of vanilla Greek yogurt
  • 3 teaspoons granulated sugar
  • 1 teaspoon brown sugar
  • dash of cinnamon and nutmeg
Begin by unrolling your pre-made pie crust and pushing into a pie plate, covering the edges with foil and forking the inside bottom a few times and baking at 350 for 10 minutes. Remove and let cool. In a saucepan on medium to low heat, add blueberries, sugar, brown sugar, cinnamon and nutmeg. Mash the blueberries and add a little water to create more of a syrup consistency. Once fragrant, remove from heat and add 1 cup of vanilla Greek yogurt, mix well. Add the mixture to the pie crust, fold over the foiled edges and sprinkle with sugar. Bake at 350 for 10 minutes. Let cool before serving and top with a dollop of fat free whipped cream!

{ Hello Summer: Ice Cream Cone Cakes! }

Well, the warm weather is here! I’m sure you’re going to be celebrating birthdays, graduations, barbeques, family gatherings and more this Summer. If you’re searching for a simple, yet delicious dessert, I’ve got just the thing for you!!

I wanted to make the last day of school for Christian a special one, so I invited a few of his friends over to have a little “school is out” party! I thought it would be a lot of fun to make ice cream cone cakes! They are really easy to make and I let the kids decorate their own!

Here’s what you’re going to need:

  • 1 box of Betty Crocker SuperMoist party rainbow chip cake mix
  • Water, vegetable oil and eggs (as directed on the cake box)
  • 24 ct. flat- bottom ice cream cones
  • 1 container Betty Crocker Rich & Creamy frosting
  • cupcake pan
I gathered the kids around the kitchen island and allowed each of them to help by adding all the ingredients and stirring the batter. When making cupcakes, I always prepare the batter in a spouted measuring cup so it’s easy to pour into the pan. Fill each muffin cup about two-thirds full and place an ice cream cone upside down into the batter; repeat for remaining. Bake at 350 for for 16-22 minutes. Allow cakes to cool completely.

While the cakes were cooling, I set up a few ingredients on the kitchen table for the kids to decorate them with! We had icing, sprinkles, M&M’s and cherries. The kids had so much for decorating them, and I had a blast watching them! This is the perfect idea for a kids birthday party, setting up all the ingredients and allowing each child to create their own!

I think we had a pretty successful celebration! The kids agreed by giving a big thumbs up ๐Ÿ™‚
