{ Chicken Noodle Casserole }

Now that the kids are back to school and your schedule is busier than ever, you’re probably looking for a quick, delicious dinner the whole family will love, right?! Well you’re in luck! Today I’m sharing one of my favorite casseroles to make on those busy nights.

Chicken noodle casserole, the perfect filling, tasty goodness! Here’s what you’ll need:

  • 1 package of egg noodles
  • 1 large can of shredded chicken
  • frozen peas and carrots
  • 1 can of condensed cream of mushroom soup and water
  • 8 oz. light sour cream
  • 1-2 tablespoons original Country Crock
  • 1 package butter crackers, crushed 
  • salt and pepper to taste
Start by cooking your egg noodles as directed on the package. In a mixing bowl combine sour cream, frozen peas and carrots, cream of mushroom soup, water (I fill my empty soup can almost full of water), chicken and salt and pepper to taste. Mix well. Preheat oven to 375. Drain egg noodles and pour into a 13×9 casserole dish. Pour veggie/cream mix onto noodles, covering the noodles entirely. Top with crushed butter crackers and 1-2 tablespoons Country Crock. Bake for 20 minutes or until the top is golden brown.

I always love to make corn muffins with this meal too and doll them up with, none other than, Country Crock! This makes the perfect meal for Fall coming up and all those busy school nights! I’m sure this meal will be kid and hubby approved 😉

  • Country Crock has 0g trans fat per serving
  • Contains no partially hydrogenated oils
  • Has no cholesterol
  • Is 70% less fat than butter per serving
  • And has 30% fewer calories than butter per serving

Fresh Veggie Grilled Cheese

Looking for something healthy, quick and delicious for dinner? You’re going to love this sandwich, it’s full of flavor! This is one I’ll be making again, and again!

Here’s what you’re going to need:

  • fresh spinach
  • ripe avocado
  • sliced red onion
  • rinsed and sliced baby bella mushrooms
  • thinly sliced mozzarella cheese
  • lightly buttered bread slices
Pre-heat your skillet on low heat, rinse and slice your veggies. Lightly butter each slice of bread and cut thin slices of mozzarella cheese. Begin with layering cheese then layering veggies ( I did, mushrooms, red onion, spinach and topped with avocado) and remaining slice of bread. Turn the heat up to a low-medium heat. I have a gas range so I tend to keep it lower. Flip only once, browning to your liking for each side. Slice and EN-JOY!!! Even the kids loved this sandwich (minus the onions!)

Southwestern Style Quesadillas

I didn’t know what to make for dinner tonight.. It’s one of those nights where I want something good, fast and easy! I browsed the fridge and pantry, and here’s what I came up with… southwestern style quesadillas. They were delicious!! Here’s what you’re going to need:

  • tortillas
  • mild or sharp cheddar cheese, shredded
  • corn
  • canned black beans
  • sour cream
  • lettuce, onions, olives (for toppings)
  • taco sauce, optional

Start by warming your skillet and spraying with a light cooking spray, fill half of the tortilla with cheese, corn and black beans. Fold over. Let cook until each side is lightly browned. Repeat for your desired amount of quesadillas. Top with a dollop of sour cream, onions, lettuce, olives and taco sauce. Or any other preferred toppings. This dinner is super delish, quick ( took me about 10 minutes start to finish ), and the kids loved it!
