Fresh Veggie and Tortellini Soup

Are you looking for a simple, delicious dinner to make this week? Well, you’re in luck! I just that to share with you today! With just a few ingredients, you will have yourself a tasty, healthy meal!
Here’s what you’re going to need!
1 package of four cheese tortellini
1 container of chicken broth
spinach (desired amount)
1 package of mushrooms
green onionsI love this meal because it’s a one pot wonder! Simply add everything to your pot and add about 1 cup of water. Cook on a low-medium heat with lid. Continue to add small amounts of water to maintain consistency. Turn heat to low and allow to cook at least 30 minutes. By this time, your veggies will be soft and full of flavor! Serve with fresh baguette and a crisp white wine, yum! Sprinkle with fresh Parmesan cheese if desired.

Fresh Veggie Grilled Cheese

Looking for something healthy, quick and delicious for dinner? You’re going to love this sandwich, it’s full of flavor! This is one I’ll be making again, and again!

Here’s what you’re going to need:

  • fresh spinach
  • ripe avocado
  • sliced red onion
  • rinsed and sliced baby bella mushrooms
  • thinly sliced mozzarella cheese
  • lightly buttered bread slices
Pre-heat your skillet on low heat, rinse and slice your veggies. Lightly butter each slice of bread and cut thin slices of mozzarella cheese. Begin with layering cheese then layering veggies ( I did, mushrooms, red onion, spinach and topped with avocado) and remaining slice of bread. Turn the heat up to a low-medium heat. I have a gas range so I tend to keep it lower. Flip only once, browning to your liking for each side. Slice and EN-JOY!!! Even the kids loved this sandwich (minus the onions!)

Fun Garden Stakes!

I think I might be a little late at getting my veggie planters started, but hey, better late than never! Since I’m a newbie, I decided to start out with just a few to make sure I can get them to grow (and keep them alive!).

I bought two cheap medium sized planters, garden potting soil, and a packet of oregano, leaf lettuce, tomatoes, and bell peppers. I really hope they turn out, because I would totally love picking fresh veggies right out of my backyard! I like the idea of using the planters because they’re easier to maintain and you can place them anywhere!

Now, I needed something cute to display the names of each vegetable… I was looking around the house for large Popsicle sticks, but couldn’t find any. Then, I remembered I had a stash of wine corks.. I grabbed those and wooden skewers. I wrote, with permanent maker, each veggie, pushed the cork onto the skewer and stuck it into the soil. It looks cute, gives it character and was free (from stuff I already had at home!). Once my plants are in bloom, they will look adorable peeking through!
