Crockpot Cauliflower Cheddar Soup

October 14, 2013 by Fotini Filed Under: cauliflower cheddar soup, crockpot, crockpot meals, Fall meals, recipes, soup 473 Comments

I’m excited to share a very tasty recipe with you today! I typically never cook with cauliflower, but thought I would think outside the box for a meal and create something new! I love using my crockpot in the Fall and Winter months! It makes cooking good meals a breeze!
Here’s what you’re going to need:
  • 1 head of cauliflower
  • 2 cups sharp shredded cheddar cheese
  • 1 32 oz. low sodium container of chicken broth
  • 1/2 cup of milk
  • 2 tablespoons of minced garlic
  • 1/4 cup of flour
Start by rinsing your cauliflower and patting dry. Pull the heads off and add to crockpot. Next add the minced garlic, chicken broth, milk and cheese. Turn on high for 2-3 hours, add the flour to thicken up, stir well and continue to cook for another 30-45 minutes.

The cauliflower is nice and soft and full of taste!! Top with crumbled bacon, additional shredded cheddar and maybe even some chives, yum! Serve with a warm french baguette!

I will definitely be making this recipe again!

1. This centerpiece is absolutely stunning! It’s the perfect Fall arrangement, including hydrangeas and white pumpkins! The colors are breathtaking and delicate for this time of year! Yvonne from StoneGable is sharing her stunning Fall Home Tour, you won’t want to miss it!!
2. White, white, white! The French Country style of this bedroom just screams perfection! I adore everything about this bedroom! I could certainly see myself cuddled up here in the evenings with a nice cup of hot cocoa, catching up on my magazines or reading a book!
3. More French Country glam! I love the mix of rod iron, mercury glass, candles and fresh flowers! Such a simple setup, yet so gorgeous!! You don’t have to invest in costly centerpieces for parties or get-together’s, just grab a variety of small candle holders and illuminate with a tea light, add fresh flowers to a ornate vase and add a pretty tray if you have it! Sometimes it’s the simple things that can make a big impact πŸ™‚
4. Ahh, I just adore white pumpkins! So many gorgeous tones this year, these appear to have a hint of blue in them! We have visited a few pumpkin patches, and intend on a few more this season! I love checking out each places variety of pumpkins! Have you been to the pumpkin patch yet?

Apple Crisp

September 30, 2013 by Fotini Filed Under: apple crisp, dessert, fall, Fall dessert, Fall recipe, recipes 13 Comments

Let me start off by saying this recipe is NOT diet friendly, but it is sooo tasty! A few weeks back we enjoyed a relaxing dinner at my in-laws. My mother-in-law baked a deeelicious apple crisp for dessert and I was quickly asking for the recipe! Lucky for you, I’m sharing it today (wink!)Β

If you haven’t been already, plan a fun afternoon to go apple picking with the family to gather some of the delicious fruit for this recipe! For this recipe I used gala apples, but any kind will do!

Begin by slicing your apples, I use an apple slicer which makes this part a breeze! If you prefer, peel your apples too, I leave mine on πŸ™‚ Add the apples to a mixing bowl and sprinkle with the lemon juice to keep them from browning. Next add sugar, flour, nutmeg, cinnamon and apples, mix well. Pour this mixture into a buttered 9×13 casserole dish. In a separate mixing bowl mix together the melted butter, flour, white & brown sugar and oatmeal, mix thoroughly and add to the apple mixture as the topping. Bake at 350 for 1 hour. Let cool at least 10 minutes before serving. To really top this delicious dessert off, add a scoop of vanilla bean ice cream, mmm mmm!

Do you have a favorite family apple crisp recipe? If so, I’d love to hear it so please share πŸ™‚

{ Fab Pins of the Week }

September 27, 2013 by Fotini Filed Under: coffee bar, diy, fab pins of the week, fall, Pinterest, polka dots, pumpkins 28 Comments

Happy Friday!! I am thrilled it’s the weekend, I’m sure you are too!
Thanks for starting your weekend out with me πŸ™‚ This week I’m sharing a few of my favorite pins that remind me Fall at it’s finest!
1. source   2. source
3. source   4. source
1. I’m absolutely in love with the variety of pumpkin colors this year! Maybe I just never payed much attention in previous years, but I’ve been spotting them so much this year β™₯ I’m crazy about the ones Marian, aka, Miss Mustard Seeds displays hers! Her entire Fall setup if just breathtaking! Believe me, you don’t want to miss it πŸ™‚
2. One thing that signifies Fall to me is warm apple cider, spiced lattes and hot chocolate! I love the idea of setting up a coffee/cider/hot chocolate bar for the entire family to enjoy! It eliminates “stuff” from the kitchen, but better yet, it looks darling! It would be fun to have some friends over and do a themed bar with different mix ins!
3. Really loving this polka dot fabric!! Isn’t it the cutest? Add some flare to your home decor by adding a fun print like this to an old (or even new!) chair! With a pattern like this, it’s easy to change pillows for each season and it easily pairs with brights and neutrals!
4. Silhouette pumpkins β™₯  β™₯  As if they didn’t already have me because they’re white, they totally got me with those darling little faces πŸ˜‰ These would make the perfect display or centerpiece for Thanksgiving! I love the technique that Jen from City Farmhouse uses for this project! The possibilities are truly endless!
