Fab Pins of the Week

August 29, 2014 by Fotini Filed Under: fab pins of the week, fall, fall decor, Fall fashion, Fall recipe, Pinterest 2 Comments

Hello beautiful and Happy Friday! I’m so happy it’s the weekend! I’m looking forward to this three day weekend! Do you have any fun Labor Day traditions? We do not, so we’re just looking forward to spending the time together!
I posted last week on my Facebook page that I was caving in and decorating for Fall. I had began a few projects, and when my son came home from school he said, “Mommy, are you decorating for Fall already?” I said excitingly, “Yes!”. He said, “I’m not ready for you to decorate yet, although I love how you decorate.” What a cutie, maybe he’s right. Maybe I shouldn’t rush into it just yet. So, I’m giving him another week (at least) of no major Fall decor! That brings me to this week’s pins, none other than Fall!

{ Pork and Bean Soup }

December 2, 2013 by Fotini Filed Under: comfort food, crockpot recipe, Fall recipe, pork and beans, soup recipe 3 Comments

My husband and I were both craving a pork and bean soup, but didn’t have a recipe. I kept browsing online but didn’t come up with the recipe I was looking for. I already had all the ingredients, so decided to go out on a whim and whip something up anyway! And I’m glad I did, it was super delish!

Here’s what you’re going to need:

  • 1 can Great Northern white beans
  • White kidney beans
  • 1 can green beans
  • 1 3-5 lb. ham, bone out
  • 1 small onion, chopped
  • 2 tablespoons minced garlic
  • 1 can condensed cream of chicken
  • Chicken broth
  • Flour (optional)
I bought a nearly 5 pound ham at Aldi for just a few bucks, it was boneless and sliced! Place ham in the crock pot and add each can of beans including juices, don’t drain! Chop up a small onion and add along with 2 tablespoons of minced garlic. Next add some chicken broth, I didn’t measure, I just poured until everything was covered. Cook on high for 3-4 hours, add the can of cream of chicken and a little flour for a thicker consistency, if desired. Cook on low for another 1-2 hours. Serve with corn bread. I like to add a slice of corn bread to thicken mine up!
The combination may sound a little weird and it might not be the prettiest soup to look at, but it’s full of taste and so warming after a cold day! My family loved it and I will certainly be making it again, and again 😉

Apple Crisp

September 30, 2013 by Fotini Filed Under: apple crisp, dessert, fall, Fall dessert, Fall recipe, recipes 13 Comments

Let me start off by saying this recipe is NOT diet friendly, but it is sooo tasty! A few weeks back we enjoyed a relaxing dinner at my in-laws. My mother-in-law baked a deeelicious apple crisp for dessert and I was quickly asking for the recipe! Lucky for you, I’m sharing it today (wink!)

If you haven’t been already, plan a fun afternoon to go apple picking with the family to gather some of the delicious fruit for this recipe! For this recipe I used gala apples, but any kind will do!

Begin by slicing your apples, I use an apple slicer which makes this part a breeze! If you prefer, peel your apples too, I leave mine on 🙂 Add the apples to a mixing bowl and sprinkle with the lemon juice to keep them from browning. Next add sugar, flour, nutmeg, cinnamon and apples, mix well. Pour this mixture into a buttered 9×13 casserole dish. In a separate mixing bowl mix together the melted butter, flour, white & brown sugar and oatmeal, mix thoroughly and add to the apple mixture as the topping. Bake at 350 for 1 hour. Let cool at least 10 minutes before serving. To really top this delicious dessert off, add a scoop of vanilla bean ice cream, mmm mmm!

Do you have a favorite family apple crisp recipe? If so, I’d love to hear it so please share 🙂
